Beetroot rice

Ingredients

  • 2 beetroots (raw or cooked)
  • sunflower seeds 1 tbsp
  • feta 100g, crumbled
  • spinach
  • For the dressing
  • 1tsp red wine vinegar
  • 1 shallot, finely diced
  • 1 orange, zested and juiced
  • 1 tbsp rapeseed oil
  • 1 heaped tsp cumin seeds, toasted

Steps

  1. Put the beetroot into a blender, and pulse until it looks like rice grains.
  2. Whisk all the dressing ingredients together with some seasoning.
  3. Pour most of the dressing onto the beetroot rice and mix. Add the spinach.
  4. Put plates and scatter over the feta, sunflower seeds and the remaining dressing.
