Ingredients
- 1 medium butternut squash
- 1/2 fennel
- 1/2 package of spinach
- 1/2 dl uncooked quinoa
- feta
Steps
- Preheat the oven to 200 C. Line a baking sheet with parchment paper.
- Peel the butternut squash and cut it into cubes.
- Place the butternut squash cubes into a bowl and toss well with the oil, salt, and black pepper.
- Pour the butternut squash cubes onto the parchment lined baking sheet in an even layer, then roast for 35-40 minutes, until the squash is soft and thoroughly caramelized on the outer surfaces, but not burned.
- Cook the quinoa.
- Cut the fennel into thin slices.
- When the butternut squash and quinoa is ready cooked toss them together with all other ingredients, topp with feta cheese.
