Fried chicken dippers with chipotle sauce

Ingredients
- chicken
- 2 small / organic chicken breasts
- IF you can only find giant mutant chicken breasts, double everything else here
- 1 egg
- dry ingredients
- 1/4 cup bread crumbs or panko
- 1/4 (or less?) cup flour
- 1 tsp fresh ground pepper
- 1 tsp paprika
- 1.5 tsp maldon salt
- 1 big garlic clove
- chipotle Sauce
- 1/2 small (170g) greek pack
- 2 tbsp mayonnaise
- 1 tsp chipotle sauce
Steps
- sauce**
- mix sauce ingredients, set aside
- prep**
- Mix dry ingredients in small bowl
- Whisk egg in separate bowl
- Cut chicken into nugget-size pieces (1"x.75" MAX), clean/remove icky veins and stuff.
- warm oil to 350f
- while oil is warming, dip chicken in egg, then roll in mix, set aside in plate
- when oil is ready**
- put in chicken pieces 4-5 at at time, so they are not crowded (may take 2-3 rounds to finish it all)
- turn once after ~2.5-3 minutes, make sure it’s looking a little brown, not white
- remove after second couple minutes (5+ minutes total)
- put on paper towels/plate uncovered, or the steam makes them soggy
