Ingredients

  • 1kg+ mashed potatoes (go a little over, it will come down to 900-ish after peeling)
  • 2 garlic cloves (crushed)
  • 100g unsalted butter
  • 100g+ double cream (extra required to get consistency rght)

Pickle It

Steps

  1. mix vinegar and sugar, set aside
  2. peel/slice the cucumber
  3. peel, shred the carrots
  4. place in a small bowl
  5. pour the mixture over, make sure to scoop out any sugar that didin’t mix *
  6. cover and put in fridge for at least an hour

Serve

Steps

  1. when ready to serve, put salad in mixing bowl
  2. scoop out veggies from brine, and toss with greens, there should be enough ‘juice’ come over from that to season the greens nicely without making them soggy.

Notes

    • could warm the vinegar, but then would have to let it cool.
    • salad mix was from waitrose
