Satay Sauce

makes 4 servings+ (1/2 is probably enough)

Ingredients
- 1/2 cup cashews, toasted. grind to almost powder, but don’t turn to paste (little chnks is OK)
- 300ml coconut milk
- 2 tbsp red curry paste
- 2 tbsp pommegranate syrup
- 2 tbsp palm sugar
Steps
- in a small non-stick pot add 1/3 cup c milk, boil
- add paste, cook until thickens
- add rest of milk, nuts, tamarind, sugar
- let thicken ( 5 min-ish)
- add fish sauce for flavour (1-2 tbsp)
