Spicy Chicken & Pork Burger

Makes 2 burgers

Ingredients

  • 200g pork shop (with fat)
  • 125g yield chicken thigh (boneless, with skin)
  • 4 bacon strips
  • Chipotle chiles in sauce ( you’ll only use 2 tsp-worth)
  • Gunidilla (spanish yellow) peppers
  • 2 pieces of bacon
  • tetilla cheese, sliced
  • cilantro
  • pickled red onion
  • buns (not sure what kind)
  • mayo,
  • lime
  • ginger paste

Steps

  1. prep ***
  2. add (?amt) ginger past and lime to mayo, set aside in fridge
  3. remove skin from thighs and set aside
  4. ground meats in food processor, don’t turn into mush
  5. add 1.5 tsp chopped chipotle and suace to meand and make patties
  6. make patties, salt & pepper outside, set aside
  7. turn on oven if you’re going to toast in oven
  8. cook bacon & chicken skin ***
  9. make bacon and skin crispy
  10. salt/pepper skin and set aside
  11. set fat aside
  12. cook burgers ***
  13. fry in pan in a bit of leftover fat, turn over after about 5 minutes
  14. put a nice slice of cheese on after you flip it.
  15. cook to 71c/160f
  16. toast buns during this time
  17. take off heat, let sit for 3 minutes
  18. assemble burgers ***
  19. lots of mayo on the toasty bread
  20. meat, then 1 slice of bacon
  21. cilantro
  22. picklec onions
  23. 1 pepper
  24. sprinkle chicken scratching on.
