Spinach soup

Ingredients

  • olive oil
  • 1 bunch if spring onions
  • 1 leek
  • 2 small celery sticks
  • 1 small potato
  • 1/2 tsp ground pepper
  • 1 l stock (vegetable or chicken)
  • 400-500 g spinach
  • creme fraiche

Steps

  1. Add olive oil, onion, leek, celery and potato in sauce pan, stir and put on lid to let it sweat for 10 min.
  2. Add stock and cook for 10-15min (until potato is soft).
  3. add spinach and cook for a few more minutes. Use hand blender to blitz to a smooth soup.
  4. Serve with creme fraiche.
